Agar Production

Agar is a hydrocolloid that can be extracted from certain red algae. They are present in plant cell walls, facilitating their flexibility and mobility to facilitate adaptation in different marine environments. Agar is a mixture of polysaccharides, the basic monomer of which is galactose. The degree of sulfation of these polysaccharides is very different but less than that of carrageenan. Agar can be divided into two main components: agarose and agar gel. Agarose is the gelling component while agarose has a very low gelling ability. Agar is widely used. Bacterial agar has been derived from red algae belonging to the genus Gelidium since the discovery of agar plates, which allowed researchers to isolate tuberculosis, cholera, and other pathogenic bacteria. This type of agar is particularly sought after by research institutions, where it is used as a medium for microbiological and molecular biology techniques (agarose gels). In the pharmaceutical industry, agar has long been used as a laxative. In the food sector, it is also used in the canning of meat, fish, and poultry, as well as in cosmetics, and dentistry fields.

    The wide 50ºC difference between gel temperature and melting point makes agar versatile in both liquid and gel form up to 90ºC.

    Our agars are produced in an animal-free and ecologically sustainable process.
  • Natural extract
    Agar is a natural seaweed extract, and most of the agar we produced is obtained from a variety of red algae.
  • Highest gelling power
    Less than 5 grams of agar is required to form a solid gel, which is 6 times less than gelatin.
  • Reversible gels
    The excellent stability of our agars makes them suitable for reversible gelation over a wide temperature range.
